This cake brings back an old childhood memory , when my mother use to make this cake in the summer time every year. This cake is very good served warm or cold with whipped cream or vanilla ice cream.

Ingredients

2 c
rhubarb ; diced
1/2 c
granulated sugar
1/2 c
shortening
1 1/2 c
granulated sugar

egg
2 c
flour
1 tsp
baking soda
1 dash(es)
salt
1 tsp
cinnamon
1 c
sour milk
1 tsp
vanilla extract
-
cinnamon and sugar ; optional

Directions Step-By-Step

Mix the diced rhubarb together with the 1/2 cup sugar ; set aside until the cake batter is all mixed up.

Mix up the remaining ingredients to form the cake batter.

Add the rhubarb mixture just before putting in the oven.

Sprinkle cake with cinnamon and sugar mixture.

Bake @ 350 deg. for 1 hour.
