Rainbow Cake

I made this for a church dinner and there was none left. It is light and airy cake, very good for summer.

3 cakes


1 box
duncan hines orange cake mix
1 box
lemon cake mix
1 box
strawberry cake mix
2 c
orange juice
4 c
powdered sugar
8 " or 10" cake pans
1 lb
fresh strawberrys
8oz carton of extra creamy cool whip

Directions Step-By-Step

Mix 1 cake mix at a time according to package, spray pans with spray oil. If using 8" pans put 2/3 cup of cake mix into pan and bake for 8-10 minutes. If using 10" pan cook 10-12 minutes at 350 degrees. After each layer bakes let cool in pan about 3-5 mins then take out of pan and cool completley. You can put wax paper in between the layers till you are ready to assemble. Mix 2 cups of powdered sugar and 1/2 cup orange juice, till you have a medium consistancy. Put 3-4 strawberries aside and puree the rest, then mix in the cool whip. Then chop in small pieces and mix in. Choose the flavor you want for the bottom layer and put the glaze on and spread,let drizzle down the sides. then a layer of the coolwhip/ strawberrie mix. Then next layer, and repeat till you have 3-layers, with coolwhip/strawberrie mix on top. This makes 3- triple layer cakes. I froze the layers that were left over in plastic wrap for another time.
