PINK LEMONADE BIRTHDAY CAKE

Ingredients

CAKE INGREDIENTS:
1 box (18.25 oz) pink lemonade cake mix or white cake mix dry (with pudding in the mixes)
3 large eggs
1/3 c canola oil
1 c water or when using white cake mix substitute with concentrated lemonade, (pink or regular), thawed (6 -oz.) don't add any water to the concentrated lemonade though)
1/2 tsp red food coloring, if desired (white cake mix)
CAKE FROSTING:
1 pkg 8 oz. - whipped, regular or light cream cheese
1 can(s) 14 - oz. sweetened condensed milk, (not evaported milk)
1 can(s) 6 - oz. frozen pink lemonade concentrate, thawed but not diluted
1 pkg (8 -oz.) cool- whip, extra creamy, thawed
1/2 tsp red food coloring, if desired

NOTE: PINK LEMONADE CAKE MIXED ARE ONLY AVAILABLE CERTAIN TIMES OF THE YEAR...
CAKE DIRECTIONS:
Follow directions on cake mix box...paying close attention to my directions please.
!.) 1 Cake mix
2.) 3 Eggs
3.) 1/3 Cup Oil
4.) 1 Cup Water OR 6 ounces frozen lemonade (thawed), (NOT reconstituted with water.)
5.) 1/2 tsp. red food coloring (white cake mix). optional
Prepare desired cake pans by spraying with 'Bakers' Joy'.
Bake @ 325 degrees F for 30 to 35 minutes or until tooth pick comes out clean.
Cool completely on baking racks or in refrigerator.

FROSTING:
COMBINE: CREAM CHEESE UNTIL LIGHT AND FLUFFY.
INCORPORATE: SWEETENED CONDENSED MILK, (NOT EVAPORATED MILK).
ADD: THAWED, PINK OR REGULAR LEMONADE CONCENTRATE UNTIL SMOOTH AND CREAMY. (lemonade NOT reconstituted with water.)
ADD: RED FOOD COLORING, IF DESIRED.
GENTLY: STIR IN EXTRA CREAMY 'COOL-WHIP' TOPPING.
(REFRIGERATE: FROSTING FOR A FEW MINUTES OR UNTIL ALMOST SET, IF DESIRED.)
(IT WILL HELP IT SPREAD ON CAKE A LITTLE BETTER.)
FROST COOLED CAKE: (AND DECORATE IF DESIRED.)
REFRIGERATE: LOOSELY BUT COVERED FOR 1 HOUR OR OVERNIGHT.
STORE: LEFTOVERS IN AIRTIGHT COVERED CAKE CARRIER IN REFRIGERATOR.
YUMMY CAKE AND FROSTING!

Hi Penny! What about the cake part? There are directions for the frosting, but no mention of what to do with the cake ingredients. Do you follow package directions? Throw all listed ingredients in a bowl and spin 'em around? How long do you bake it and at what temperature? What size pan(s) do you use? A little help, please! Thanks!

I have no idea what happened to the cake directions...I posted them.
But I needed to edit it. I guess they will be back up soon.
Nevertheless, Follow the directions on the back of the box, Use whatever size pan you wish. Spray it with 'Bakers Joy', Preheat oven to 325 to 350 degrees F. Or follow the directions for that on the box also. If it calls for water in the mix, substitute the water with 6 oz, frozen lemonade, thawed (regular or pink). (DO NOT add any water to it). Mix with electric mixer for about 2 minutes. Then pour badder into prepared pan(s). (I used a 9x13x2" pan for my cake)Bake for 30-35 minutes or until toothpick comes out clean. Cook on cooling racks or in refrigerator for at least 30 minutes before frosting.

That was supposed to say COOL on cooling racks or in the refrigerator for at least 30 minutes. Frost and decorate as you wish. Hope it's the BEST!
