one day my father asked if I knew how to make a pineappleupside down cake, mom was in the hosp. i said I'll figure it out pop. And I did. Here it is . by the way he said it was better than moms. oooooo

1/4 c
butter
2/3 c
brown sugar, firmly packed
1 can(s)
pineapple slices
maraschino cherries optional
1 1/3 c
all purpose flour
1 c
sugar
1/3 c
shortening
3/4 c
milk
1 1/2 tsp
baking powder
1/2 tsp
salt

egg large
1/4 tsp
vanilla extract or almond extract
whipped cream, sweetened

Preheat oven at 350 degrees

in a 9x9x2 baking pan melt butter in oven. once melted remove from oven and sprinkle brown sugar evenly in baking dish. Then place pineapple rings in rows, then put cherries in each ring.

In a large mixing bowl beat remaning ingredients with electric mixer on low for 30 seconds scraping sides of bowl to make sure all ingredients are mixed in well, then beat on high for 3 minutes, scraping bowel occasionally. Pour mixture over the prepared pan of pineapples.

Bake 50 minutes, or until tooth pick comes out clean.

As soon as you take cake out of oven turn it over on a heat proof plate. Leave pan on for 3 to 5 minutes then pick pan up slowly. (sometimes you will need a spatula to scrape brown sugar pineapple on top of cake. becareful the heat can burn you.

Serve with whipped cream if you'd like.
