Pineapple Cake

I first had this cake at a bridal shower and was a dense cake, but so moist and delicious. I had to have the recipe. I have since then made this many, many times. The frosting is so creamy. I usually add coconut to the top, but to my surprise was out of it. It's great on it though.

Ingredients

eggs
2 c
sugar
1 tsp
vanilla extract
1/2 tsp
baking soda
2 c
all purpose flour
1/2 tsp
baking powder
1/2 tsp
salt
1 can(s)
(20 ounces) crushed pineapple, undrained
1/2 c
chopped walnuts

FROSTING

1 pkg
(8 ounces) cream cheese, softened
1/2 c
butter, softened
2 c
confectioners' sugar

Step-By-Step

1Preheat oven to 350 degree F

Grease a 13-in. x 9-in. baking pan.

2In a large bowl, beat the eggs, sugar and vanilla until fluffy.

3Combine the flour, baking soda, baking powder and salt; add to egg mixture alternately with pineapple. Stir in walnuts.

4Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

5In a small bowl, beat the cream cheese, butter and confectioners' sugar until smooth. Frost cake. Sprinkle with coconut ( optional ). Store in the refrigerator.
