I enjoy serving this cake when we have cookouts on the weekends. Our friends really like this one. But my gal pals like this one equally when we're having a girls night out. A definite adult tasting cake.

1 box pineapple cake mix
1 8oz. can crushed pineapple with juice
3/4 cup water
1/3 cup vegetable oil

In another bowl, Beat together Dream Whip dry mix, pudding dry mix, 1 1/4 cup milk and rum extract. Beat until blended. Add 1 drop of yellow food coloring. Mix until blended. Let sit for a few minutes and the frosting will thicken.

NOTE: If you are using 2 round cake pans, put the first cake layer bottom side up on your serving tray. Spread a layer of frosting on it. Place the other cake layer bottom side down. Frost the entire cake. Sprinkle all over with coconut. If using a 9x13 just frost the top and sprinkle with coconut.
