Ingredients For paradise banana bread

  • 3/4 c
    golden raisins
  • 1/3 c
    dark rum
  • 1 3/4 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 5 lg
    very ripe bananas, mashed
  • 1 c
    dark brown sugar, firmly packed
  • 3/4 c
    butter, melted
  • 1 1/2 tsp
    pure vanilla extract
  • 8
    dried cherries, diced

How To Make paradise banana bread

    Preheat oven to 325 degrees F. Grease a 9" x 5" loaf pan.

    In pot, mix raisins & rum over medium heat, bring to boil. Cook until most of the rum has been absorbed; remove from heat & cool.

    In bowl, mix flour, powder, soda & salt; mix well & set aside.

    Beat bananas, sugar, butter & extract until sugar has dissolved; stir into flour mixture until combined.

    Stir in cherries & rum mixture.

    Bake 1 - 1 1/4 hours or until toothpick comes out clean.
