Ingredients

1 c ricotta cheese
1 pkg cream cheese (8onz)
1/2 c heavy cream
1 c sugar
2 egg
1 Tbsp all purpose flour
1/2 orange zest
2 Tbsp orange juice (from the same orange u zested)
1 tsp vanilla extract
CHOCOLATE AND ORANGE CRUST
1 1/2 c chocolate cookies crumbles
1 Tbsp orange zest
4 oz melted butter

Preheat the oven to 350F. Melt the butter in a pan over low heat, the stir in the crushed cookies and orange zest. Press the mixture evenly into a base of a springform pan(tall cheese cake pan). Cut a big piece of aluminiun foil and cover the botton of spring form pan (that way it will cook perfectly in the bain marie). Set a side

For the filling beat together cream cheese, heavy cream ,ricotta,sugar,orange zest,eggs,flour and vanilla until evenly mix. Pour the batter into the cheesecake pan. Make a Bain marie (use a brownie pan pour water (2 cups)place the springform pan.

Bake it for 1 hour and 30 minutes. Let it chill for 6 hours. Decorate with strawberries or mangoes . great combination.

This looks delicious. Just to clarify, do you put 2 cups of hot water into a larger pan and then set the springform pan into it while baking? You don't have trouble with the water seeping into the springform at all do you?

Chef, I have 3 sizes of spring form pans. The smallest is 9 inches. I would imagine the size would be appropriate for the ingredients, however, I thought I would check with you first.

sounds great!!! i'm not big on chocolate crust, would regular crust be ok? i dont mean a pie crust.
