chris' Story

This is a quick and easy fix for when you just have to have that cinnamony cake thing :) Most of the ingredients we already have on hand and throwing it together is no fuss and no muss! Great for a quick Sunday dessert or breakfast and also works well for those last minute school carry-to's that the kids forgot to tell us about til the night before.

Ingredients

BATTER
3 c
all purpose flour
1/4 tsp
salt
1 c
sugar
4 tsp
baking powder
1 1/2 c
milk
2
eggs
2 tsp
vanilla extract
1/2 c
butter, melted
TOPPING
1 c
butter, very softened
1 c
brown sugar
2 Tbsp
all purpose flour
2 Tbsp
cinnamon
GLAZE
2 c
powdered sugar
5 Tbsp
milk
1 tsp
vanilla extract

Directions Step-By-Step

In a large bowl, mix all "BATTER" ingredients, except butter. Mix well

Slowly add in melted butter and mix well.

Pour batter into a greased 9"x13" pan. (If you would like a thicker cake, you may also use a 9"x9" pan)

In seperate bowl, mix topping ingredients together til combined.

Drop topping onto prepared batter and swirl with a butter knife.

Bake at in a preheated 350 degree oven for 40 minutes. (If you are using the 9"x9" pan, bake for 50 mins)

Pull cake out of oven and mix glaze ingredients in seperate bowl.

While cake is still warm, drizzle glaze over top. Let stand 15 mins before cutting/serving

I have made this cake numerous of times myself and never had I ever had any complaints on it. I love this cake. I have even had orders for this cake and sold it several times.

Janis, I'm sorry to hear this recipe didn't work out for you. I've made this numerous times and have always been very pleased with it, however, I've always used the 13 x 9 pan. I did make it once and ended up having to melt the butter for the topping because I had forgot to take it out to soften and I found I liked it even better that way - it was more marble/swirled like within the cake. I don't have any suggestions as far as the cornmeal taste - I didn't encounter that at all any of the times I've made this.

The picture looks like a wonderful cinnamon roll. I was so disappointed. For starters, I made the cake as per the recipe. The cake tasted as if it had cornmeal in it for some reason, and FAR TO MUCH CINNAMON! DO NOT USE A 9" x 9" pan...I did & a goodly amount of the cake ran out all over my over. This one is a major NO.
I hate it when people rate something 5 stars and they haven't even tasted the recipe yet. This is wrong of Just A Pinch to allow this practice, it skews actual rating for the recipe.

Made this cake last night and it is delicious and I will make it again. All of the ingredients are household stapels . The only thing I will do differently next time is put a sheet of greased wax paper in the bottom of the greased pan. My cake stuck to the pan!
