Mini Cheesecake Surprise

This is my own adaptation of a Paula Deen recipe. How many mini cheesecakes it makes depends on the size of the muffins. This is the recipe that made me realize that all muffin pans do not make the same size muffins.

My friends and family love it so much that this is one of the things they always what they want me to bring to pitch-in dinners.
