Mashed Potatoe Cake

This recipe was from my maternal grandmother. My mom & her sisters made it often growing up. My Aunt's daughters made it while they were growing up & still do to this day. They asked why we never made it growing up, I told them "with 11 siblings, we never had any left over mashed potatoes.

Ingredients

MASH POTATOE CAKE

2 c
sugar
2
eggs
1 tsp
salt
2 tsp
cinnamon
1 tsp
allspice
2
squares bitter chocolate
3/4 c
shortening
2 c
flour
2 tsp
baking powder
1/2 tsp
nutmeg
1 tsp
vanilla
1 c
mashed potatoes
1 c
milk

Directions Step-By-Step

Preheat Oven to 375.
Melt bitter chocolate. Cool.
Mix sugar, eggs, spices. Add potatoes and milk and mix until blended. Add cooled, bitter chocolate.
Pour into 2 greased and floured (or Pammed) 9" round cake pans.
Bake at 375 for 25-30 minutes. Let cool completely.

Top with icing made from confectioner's sugar, milk, vanilla.

Make icing from confectioner's sugar, milk, vanilla. If icing is too thick, add more milk a little at a time. If to runny, add more confectioners sugar. Spread icing in between layers. Before icing top of cake & sides, cut straws to insert into cake to hold rounds together. Ice top & sides.
