I LOVE to host a great girls night out! That's part of the reason I became a Mary Kay Cosmetics Consultant and these events always give me plenty of reasons to bake! What girl doesn't love a good margarita? And these delightful cupcakes baked right in the margarita glasses will surely have people talking! I hope you enjoy them, they've been a hit for me!

Blue Ribbon Recipe

I was a bit nervous to put an ordinary glass in the oven to bake a cupcake, but I'm so happy I tried this recipe. The cupcakes are moist and delicious. And the frosting? Yum! Next time, I'm going to double the recipe so I can eat the frosting my the spoonful. The glasses and the sugared rim make for a very impressive presentation!

Ingredients For margarita cupcakes

  • 1 box
    white cake mix, or 1 recipe of white butter cake
  • 2 sm
    limes
  • green food coloring
  • FROSTING
  • 3-4 c
    confectioners sugar
  • 1/3 c
    butter, room temperature
  • 1 sm
    lime peel, grated
  • 1 1/2 Tbsp
    lime juice
  • 1-2 Tbsp
    tequila
  • 1
    lime wedge

How To Make margarita cupcakes

    Prepare the cake mix according to the directions, add the zest and juice of two limes and enough food coloring to give the cake a faint green color. Bake in the margarita glasses for 10-15 minutes or until golden and bounce back when touched.

    Remove from the oven and allow to cool completely. Once cooled rim the glasses with green colored sugar. and set aside.

    For the frosting blend together the butter, lime juice, lime zest, and tequila. Once well mixed add the sugar a cup at a time until you reach the desired consistency. Chill for 15-20 minutes and then pipe onto the cupcakes, and garnish with a lime wedge.
