The carrots and pineapple make this bread so moist! And the Test Kitchen smelled amazing while this was cooking. The spices are perfect and the nuts add the right amount of crunch. De-lish!

can of crushed pineapple (undrained)

baking soda

cinnamon

1 tsp
vanilla
1 c
chopped pecans or walnuts

Directions Step-By-Step

BEAT OIL,SUGAR AND EGGS WELL. ADD IN CARROTS AND PINEAPPLE WELL. SIFT DRY INGREDIENTS AND ADD TO OTHER MIXTURE. ADD VANILLA AND NUTS.

GREASE AND FLOUR 2 LOAF PANS, DIVIDE BATTER AND BAKE AT 350 DEGREES FOR 1 HOUR OR TILL A TESTER COMES OUT CLEAN.


BEST SERVED WITH HONEY BUTTER: 1 STICK OF REALLY SOFT BUTTER WITH AN 1/4 CUP OF HONEY MIXED WELL.
