Notes from the Test Kitchen:
This is a very moist cake!  If I close my eyes while eating it, the aroma almost makes me feel as though I'm eating fresh strawberries.  There's no better endorsement than that!

FROSTING

box of powdered sugar
1/2 c
mashed strawberries, drained

I use the frozen strawberries that are in juice. They've already been sweetened. Hope this helps!

I have seen similar recipes...do you use fresh or frozen strawberries? Approximately how much sugar do you add to sweeten the cup of strawberries?

This is a great cake. Very moist. Just make half of the recipe for frosting and you will still have more than enough.

This is my son's only birthday cake that he ever asks For for the last 7 years! Never mind that he is a boy and it is pink (a big deal at 10 years old!). It never fails that everyone else loves it too! Even people who have said they hate strawberry cake and then politely take a small taste anyway, end up loving it and having more! It never fails we will have people asking for the recipe at the end of the party. This is a great strawberry cake!
