if you like a cheesecake that is not heavy this is my take on it.

Ingredients For light cheese cake

  • 1 pkg
    graham crackers, crushed
  • 4 Tbsp
    butter or margarine, melted
  • 1 Tbsp
    sugar
  • 3 pkg
    8oz cream cheese room temp
  • 1 can
    sweetened condensed milk
  • 2 can
    evaporated milk
  • 5 lg
    eggs
  • 4 Tbsp
    sugar
  • 1 tsp
    vanilla extract
  • 1 tsp
    lemon extract
  • 1 can
    your favorite topping, blueberry etc.

How To Make light cheese cake

    crust...mix the crushed graham crackers with melted butter and 3 tbls sugar.... press into spring form pan...bake 10 minutes at 350 degrees.

    in electric mixed, softened cream cheese, evaporated milk and beat till blend well. Add eggs one at a time and beat..add sugar can use splender if you want to, add extracts, Add sweetened condensed milk..Pour into graham crust and bake at 350degrees till tests done 1hour to 1 and 1/2 hours...top should puff.

    let cool and refrigerate... add your favorite topping..canned is fine.. serve when well chilled.
