Marian's Story

My friends enjoy this cake when I serve it after a great dinner. as it is not sweet and I have often served it with a dollop of home made strawberry sauce.


egg white...{3/4 cup}
1 3/4 c
all purpose flour,{sift before measuring}
1/2 tsp
1 1/2 c
6 Tbsp
fresh orange jjuice
egg yolks
1 Tbsp
orange zest
2 Tbsp
confectioners' sugar

Directions Step-By-Step

Remove eggs from refrigerator and leave out for an hour..while this is waiting sift flour and that eggs have sat out..beat until foamy gradually beat in 1/2 cup sugar do this by adding sugar slowly not all at once continue beating til stiff peaks form when beater is slowly raised..set aside.
Pre heat oven to 350F..In smaller bowl with same beaters {no need to wash them }beat at high speed until very thick and lemon-colored about 3 minutes do not UNDERBEAT..gradually beat remaining 1 cup sugar and continue beating until smooth at low speed blend flour and orange juice alternately into egg yolks..add orange zest.
With whisk or rubber spatula using under and over motion..fold egg yolk mixture gently into egg whites...Pour batter into ungreased 10 inch tube pan and bake for 35 to 40 minutes until cake springs back when pressed with finger,, remove from oven and run a table knife around outside edge and around tube this after cake has cooled slightly..invert onto wire rack..sift confectionery sugar over cut cake Use knife with serrated edge.cut gently in a sawing motion..
