lemon citrus bundt cake

This lemony citrus cake is wonderful and refreshing. Sometimes I add blueberries or raspberries to the cake itself or just for decoration for a little extra treat. Do not skip the amazing frosting (although it would still be delicious)!

Ingredients For lemon citrus bundt cake

  • CAKE
  • 1 box
    lemon cake mix
  • 1 pkg
    lemon instant pudding mix (3.4 oz)
  • 1 1/4 c
    water
  • 1/2 c
    coconut or vegetable oil
  • 4
    eggs
  • FROSTING
  • 11 oz
    lemon curd
  • 8 oz
    whipped topping

How To Make lemon citrus bundt cake

    Preheat oven to 350 degrees F.

    Mix all ingredients for the cake together in a bowl for 2 minutes by hand or with an electric mixer. Pour into a bundt or sheet pan with sides (your choice). Bake approximately 43 minutes, depending on the pan. (I start checking at around 35 minutes.) Remove and let cool completely.

    To make the frosting, mix the lemon curd and whipped topping until fully incorporated. Frost the cooled cake. This cake is wonderful cold or room temperature.
