Lemon Bundt Cake

I searched online for a great recipe to use up some yellow cake mixes I had in my pantry. When I came across this recipe I made it over and over using up all my cake mixes. Once I had used up all my cake mixes I purchased a sugar free cake mix and sugar free confectioners sugar to make this diebetic friendly recipe. It is so delicious you won't believe it is sugar free!

Ingredients

CAKE

8 oz
cream cheese, softened
1 c
milk
2 Tbsp
grated lemon peel (from 2 large lemons)
3
eggs
1/4 c
lemon juice (from one lemon)
1 box
sugar free yellow cake mix

GLAZE

2 c
sugar free confectioners sugar
2 Tbsp
lemon juice (from one lemon)

Step-By-Step

1Grease and flour a Bundt pan and preheat oven to 325
2In large mixing bowl beat cream cheese until totally softened.
3Add eggs, lemon juice, and grated lemon then beat for at least one minute
4Add rest of cake ingredients and beat two minutes more then pour batter into pan and bake for 40 minutes.
5Allow cake to cool in pan then flip unto serving plate
6Use two cups of confectioners sugar in a medium size bowl and whisk in just enough lemon juice to make a thick glaze. You will not need all the juice.
