Ingredients

1 1/4 c
boiling water
1 c
oatmeal, uncooked
1/2 c
butter, softened
1 c
sugar
1 c
brown sugar, firmly packed
1 tsp
vanilla extract
2
eggs
1 1/2 c
all purpose sifted flour
1 tsp
baking soda
1/2 tsp
salt
3/4 tsp
cinnamon
1/4 tsp
nutmeg

FROSTING INGREDIENTS

1/2 c
brown sugar, firmly packed
3 Tbsp
half and half
1/2 c
chopped nutmeats
3/4 c
coconut, flaked
coconut, flaked

Step-By-Step

1Cake - Pour boiling water over oats; stir to combine. Cover and let stand 20 minutes.

2Beat butter until creamy; gradually add sugars, beating until fluffy.

3Blend in vanilla and eggs.

4Add oats mixture; blend well.

5Sift together flour, soda, salt and spices.

6Add to creamed mixture; blend well.

7Pour batter into a well-greased and floured 9-inch square baking pan.

8Bake in preheated 350 oven 50 to 55 minutes.

9Do not remove cake from pan.

10Frosting - combine all ingredients.

11Spread evenly over cake.

12Broil until frosting becomes bubbly.

13Serve warm or cold.

14VARIATION - COCOA OATMEAL CAKE: Increase boiling water to 1-1/3 cups in above recipe. Use 3 tablespoons cocoa in place of the cinnamon and nutmeg. Prepare and bake as above.
