Kit's Banana Cake....

I make this cake when I have lots of left over banana's. It's quick & easy to make.

Ingredients

2
eggs, separated
1 1/2 c
sugar
2 c
cake flour
1 tsp
baking powder
1 tsp
salt
1 tsp
baking soda
1/3 c
vegetable oil
1 c
banana, mashed
2/3 c
milk
1 tsp
vanilla extract
1/2 c
macadamia nuts, chopped

Step-By-Step

1Heat oven to 350F. Lightly grease & flour 2 round 8x8 inch pan.
2Bake egg whites, gradually add 1/3 cup sugar at a time until stiff peaks & glossy.
3In medium bowl sift the remaining dry ingredients together.
4Add oil, banana & 1/2 of the milk with the vanilla. Beat for 1 min.
5Combine everything together & the remaining milk & mix well.
6Fold into meringue with the nuts. Pour into cake pan.
7Bake for 30 to 35 mins. Cool well & frost with frosting.
