Wrap bottom of a 9 inch springform pan with a double layer of foil; coat pan with non stick spray.
Combine the first 3 ingredients. Press onto the bottom of pan. Bake at 350* for 8-10 min, cool.
In a large mixing bowl, beat cream cheese until smooth. Combine the sugar and flour, gradually beat into cream cheese.
Add eggs, beat on low speed just until combined. Beat in sour cream, lime juice,peel,vanilla, and food coloring, until combined.
Pour into crust. Place pan in a large baking pan; add 1 inch of hot water to larger pan. Bake at 350* for 40-45 minutes or until center is set. Remove pan from water bath. Cool on wire rack. refrigerate for at least 1 hour or overnight. Run knife around sides of pan before removing ring... Enjoy!
