Lynnda Cloutier

OK, folks. Here's a reason to get out the cast iron skillet!

pinch tips: How to Cream Butter & Sugar

3/4 cup plus (1 1/2 sticks) plus 1 tbsp. butter, no substitutions
3 eggs
1 1/2 cups sugar
1 1/2 cups sifted flour
1 tsp. almond flavoring
dash salt
1/4 cup slivered almonds
powdered sugar to taste

Directions Step-By-Step

Preheat oven to 350. Melt butter in 10 inch cast iron skillet. Whisk the eggs in large bowl until blended. Add sugar, 1 1/2 cups flour, the flavoring and salt; mix until combined. Stir in melted butter. Coat the cast iron skillet lightly with flour and pour the batter into the skillet. Sprinkle with almonds. Bake for 30 minutes or until cake begins to pull from the side of skillet. Do not overbake. Immediately wrap the cake in foil to keep moist. Dust with powdered sugar before serving. Serve with fresh fruit. Serves 8 to 10
Note: Use the 1 Tbsp. melted butter to coat skillet. The 3/4 cup melted butter goes into the cake.
