LIME CAKE INGREDIENTS:
white cake mix
1(4 serv box
lime jell-o, (dry)
1 1/4 c
bottled non-alcoholic margarita mix
lime juice, fresh squeezed
10 to 20
drops green food coloring, if desired
whipped cream cheese
1 - 8 oz. pkg
frozen cool-whip, thawed
lime jell-o, dry (4 serving size)
1 to 2 Tbsp
bottled, non-alcoholic, margarita mix
1Preheat: Oven to 350 degrees F.
Coat: A 9x13x2-inch pan with cooking spray.
2In: A large mixing bowl, beat together cake mix, 1 pkg. dry lime jell-o, egg whites, oil, margarita mix, green food coloring, lime juice, lime zest and water until well blended.
Pour: Into prepared pan.
3Bake: About 30 minutes, or until a toothpick inserted in center comes out clean.
Remove: From oven and let cool.
4Meanwhile, In a medium mixing bowl, make frosting by beating whipped cream cheese and thawed cool-whip with electric mixer.
Add: Dry lime jell-o (slowly) and continue to mix well.
Add: Lime zest and 1 to 2 Tbsp. bottled margarita mix and continue to mix well with mixer until light and fluffy.
Frost: Cooled cake, cover loosely, and chill at least one hour before serving.
Store: Covered leftovers in refrigerator.
