Ingredients

HUMMINGBIRD CAKE

3 c
all purpose flour
2 c
sugar
1 tsp
salt
1 tsp
baking soda
1 tsp
cinnamon, ground
3
egg--beaten
1 1/2 c
vegetable oil
1 1/2 tsp
vanilla extract
1 can(s)
pineapple, crushed
2 c
bananas -- chopped " about {4}"
2 c
pecans, chopped

CREAM CHEESE FROSTING

2 pkg
8 oz softened cream cheese
1 c
butter -- {2} sticks
32 oz
confectioners' sugar
2 tsp
vanilla extract
1 dash(es)
salt

Step-By-Step

1In large bowl combine dry ingredients .. Then add eggs and oil; stir until moistened.
2Stir in vanilla,pineapple, banana's, and one cup chopped pecans.
3Spoon batter into {3} greased and floured 9-inch cake pans.
Bake at 350 for 25 minutes
4Cool in pans 10 minutes and remove from pans on wire racks and cool completely.
5CREAM CHEESE FROSTING ......
6MIX IN LARGE BOWL WITH ELECTRIC MIXER:
Beat cream cheese and butter until smooth.
7Add confectioners sugar and beat until light and fluffy. Stir in vanilla and salt.
8Generously spread frosting between cooled cake layers
and on side and top of cake.
9Garnish with remaining {1} cup pecans
