Healthy Coconut Cake

- white cake mix
- 1 can(s)
- diet Sprite (or any lemon lime soda)
- 1 c
- 1 c
- 1 tsp
- coconut extract
- 1 small
- sugar-free cool whip
- coconut to sprinkle on top
1Preheat oven to 325 degrees. Spray 9x13 glass dish with cooking spray.
2Mix cake mix and Sprite until well blended. Pour into pan and bake 30 minutes.
3While cake is baking, mix water, splenda and coconut extract and set aside.
4Poke holes in hot cake with a fork. Pour water mixture over cake and allow to cool completely.
5Spread cool whip on cooled cake and sprinkle with coconut.
6Refrigerate until ready to serve.
