Grandmom Elaine's Pumpkin Roll

This is a hand written recipe from my mother-in-law Elaine. I have added it just as she had it written with any clarifications in parentheses.

Ingredients

3
eggs
1 c
sugar
1 tsp
lemon
2/3 c
pumpkin
3/4 c
flour
2 tsp
cinnamon
1 tsp
baking powder
1 tsp
nutmeg
1 c
walnuts, chopped
1/2 tsp
ginger

FILLING:

1 c
powdered sugar
2 pkg
3-oz each, cream cheese
4 Tbsp
butter
1/2 tsp
vanilla

Directions Step-By-Step

(Preheat oven to 375)

Beat the eggs 5 mins. Add sugar & lemon.

Add pumpkin. Stir in by hand.

Add dry ingredients & mix. Fold into pumpkin mix.

Use foil or paper on bottom of pan (jelly roll pan). Spread dough on pan. Bake 15 mins at 375.

Take a dish towel with powdered sugar. Invert on towel & roll long. (roll from the long side).

Put onto pan & cool. Unroll, spread filling, reroll. Let firm in foil in refrigerator.
