Ingredients

4 c peeled and shredded apples (any kind sweet or tart depending on your taste) i leave the skin on my apples!
2 c sugar
2 c flour
1 1/2 tsp baking soda
3 tsp cinnamon
1 tsp salt
2 eggs
3/4 c oil
1c pecans chopped (optional)
(options) powder sugar to sprinkle on top, caramel to drizzle, ice cream, cool whip

This is my grandmas fresh apple cake recipe. I have tweaked it but there is very little you can do to country baking perfection. I miss her dearly and this is my way of keeping her around.

 

Directions

Stir apples and sugar in large bowl

Add dry ingredients (Flour, baking soda, cinnamon and salt)

Stir in the egg mixed with the oil into the dry ingredients until thoroughly moist (do not over mix)

Stir in nuts and pour in 9X13 pan sprayed with butter flavor no-stick spray.
Bake at 350 for 50 minutes
springs when pressed when done

Options:
Sprinkle with powdered sugar
Drizzle with caramel
serve with cool whip
serve ala mode with vanilla ice cream

I have this one baking in the oven right now...the house smells wonderful !!! I'm thinking about putting a caramel glaze with the pecans in it on top...my husband's co-workers will have a wonderful Fall treat in the morning !!1 Thanks for the recipe...

I'm thinking of putting melted butter, brown sugar and chopped pecans in the bottom of the bundt pan then placing thin slices of apples on that. Then I'll put the cake batter in on top....like a pineapple upside down cake. Wonder how that will work.....I'll let you know... ;)

My husband just brought back the empty plate from taking these in to work. He said they were almost gone before he could get them completely unwrapped ! Thanks again ! You certainly made me look good today !
