They say you can use Coconut Flour to make these Gluten free, but I have never tried it.

You can purchase the funnel cake kits that have the pitcher and the ring online (eBay) or at specialty kitchen stores. I have even seen them at Walmart during the holidays. But they are not necessary you can use a funnel ( with a 1/2" to 3/4" hole) to pour the batter into the oil. As for the ring they are just to keep them uniformed (circle) again not a necessity.

Directions Step-By-Step

Start heating you oil for frying the cakes. You can use a deep fryer or a large heavy bottom frying pan (a couple inches of oil in frying pan). Heat it to 375 degrees.
In a medium bowl mix Egg and Milk. In another bowl sift together your dry ingredients Flour Baking Powder Sugar and Salt. Gradually add the dry ingredients into the milk mixture and beat until smooth.
Check you oil making sure it is at 375. If you have the ring place it into the oil and pour the batter inside the ring into the hot oil drizzling it in circling motions. If you are not using the ring just drizzle in a circle first and then back and forth to create the round cake. shape. Don't stay in one place.
Carefully remove the ring.
Cook for about a minute (until golden brown on bottom) take your tongs and turn it over cooking the other side. Once it is cooked both sides carefully remove it to a cooling rack or a paper plate covered in paper towels to catch the grease.
Sift powdered sugar on top as soon as you remove it from the oil. You can eat now or add other toppings. This is where you can use your imagination and put your favorite toppings on it.
