Easy Carrot Cake...

This was the first cake I ever made. It did crack the first time but it was still good...

Ingredients

1 c
sugar
1/2 c
vegetable oil
1 1/2 c
all purpose flour
2 tsp
baking powder
1/4 tsp
salt
1 tsp
cinnamon
1 c
carrots, grated
2
eggs, beaten
1/2 c
nuts, chopped

Directions Step-By-Step

Heat oven to 350F. In medium bowl mix sugar & oil together. Sift the dry ingredients,mix in carrots & add in the sugar mixture.

Add 1 egg in at a time & beat well with each egg. Then add in the nuts of any kind & mix very well. Then pour into pre oiled 2 1/2 inch loaf pan.

Bake for 55 to 60 mins. Cover with aluminum foil for the first 20 mins. It will reduce cracking. Serve warm or cold.
