Easy 3 Berry mini cupcakes with keylime frosting

I came up with this recipe to add more fruit to my 3 kidos diet:) !!! They love these fun mini cupcakes and enjoy making them with me:)I hope everyone who tries these enjoy them as much as we do!!

egg whites
1/4 c
vegetable oil
1 c
8 0z pkg
cream cheese
1 pkg
white cake mix
1 c
frozen thawed 3 berry fruit mix
1 jar(s)
plan whipped frosting
3 Tbsp
keylime juice

Directions Step-By-Step

Preheat oven to 350 degrees. In a medium bowl beat eggs ,vegetable oil and water until bubbly :)
In a large bowl beat cake mix(do not prepare cake mix) ,cream cheese and a tablespoon of keylime juice until creamy.`
Add the egg mixture to the cake mixture and dethawed cup of berries mix until all is combined. Scoop into mini lined cupcake pan bake for 15 to 20 minutes. While cupcakes are baking take remaining keylime juice fold into whipped frosting ( I like mine tart so I add and extra 2 TBLs to the frosting)When cupcakes are done and cooled add frosting and enjoy:) P.s I also like to take some of my left over thawed berries and make a quick berry sauce to top my cupcakes with.
Extra sauce topping ! 1 cup of berries ,tsp sugar and tsp keylime juice. Combine all ingredients in food processor pulse a few times and theres your simple berry sauce:)
