Another DIY cake mix for your larder! I am collecting these to put in a cookbook for my children (and I of course!). A spice cake can be used for so many other kinds of cakes too...carrot cakes, applesauce cakes, oatmeal cakes, etc. I hope you enjoy this recipe and the convenience of being able to have it on the shelf if you need it, without having to get it at the store. This is not only easier, but cheaper!
Combine all dry mix ingredients and store in an airtight container or Ziploc bag with instructions and the date packaged.
Preheat oven to 350F degrees. Grease and flour a 9 x 13-inch cake pan.
In a large bowl with an electric hand mixer on high speed, cream butter until smooth. Add 1 egg at a time; beating well after each addition. Reduce speed to low and add water and vanilla and continue beating for approximately 2 minutes more.
Slowly add the pre-made cake mix to the wet ingredients one cup at a time mixing thoroughly after each addition and scraping down sides.
Pour into the prepared cake pan. Tap on counter to distribute and smooth top.
Bake for approximately 25-30 minutes. Cool thoroughly before frosting or serving.
