Delicious Carrot Cake

This recipe has been passed down to me through generations. It is easy to make and a guaranteed crowd pleaser. Every time I make one, somebody wants me to make one for them. Great for Thanksgiving or Christmas. UM! UM! GOOD!

Ingredients

2 c
all purpose flour
2 tsp
baking powder
1 1/2 tsp
baking soda and salt
2 c
sugar
1 c
coconut
1/2 tsp
cinnamon
1 c
vegetable oil
4 large
eggs
2 c
grated carrots
8 oz. can(s)
crushed pineapple, drained
1/2 c
chopped nuts

Step-By-Step

1Sift first 3 ingredients in large bowl.
2Stir in sugar, coconut, cinnamon, oil, eggs, carrots, pineapple and nuts.
3Pour into 2 buttered floured 9 inch cake pans.
4Bake 350 degrees for 40 minutes. Let cool on wire rack.
