Ingredients

eggs, beaten
1 1/3 c
sugar
2 tsp
vanilla
2/3 c
melted butter
3 c
grated zuchinni
2 tsp
baking soda
1 pinch
salt
1 tsp
nutmeg
2 tsp
cinnamon
1 c
walnuts or pecans (optional)
1 c
cranberry raisins

Step-By-Step

1preheat oven to 350. mix sugar, eggs, and vanilla until well mixed
2mix in zuchini and melted butter.
3sprinkle in baking soda and salt. mix in
4add flour a 3rd at a time.
5sprinkle in cinnamon and nutmeg and fold in nuts and cranberries.
6divide batter into two buttered loaf pans, bake 1 hour. cool 10 minutes and pull from the pan and cool on racks
