Great Sponge cake and so easy to make ...would be great for a brunch.

Ingredients

FOR THE BATTER :

1/2 c
scalded milk
1 tsp
butter
2
eggs
1 c
sugar
1 c
flour
pinch
salt
1 tsp
baking powder

FOR THE TOPPING :

5 Tbsp
brown sugar
3 Tbsp
butter
2 Tbsp
cream
shredded fresh coconut

Step-By-Step

1Scald the milk and add butter.
2Beat eggs well in a mixing bowl and add sugar and mix.
3Sift together : flour , salt , baking powder ; Add to the egg mixture ; Add the milk and butter last.
4Pour into a ungreased layer pan.
5Bake @ 325° for 35 minutes.
6For the topping : Warm together brown sugar , butter and cream. Spread on hot cake and sprinkle with fresh coconut and return to the oven for 5 minutes ; Serve Warm.
