Ingredients
- CUPCAKES:
- 1 cup dark brown sugar, firmly packed
- 1 stick butter, room temperature
- 2 x large eggs
- 1 1/4 cups all-purpose flour
- 1/2 cup dark cocoa powder
- 1 sm package instant chocolate fudge pudding mix, dry
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons instant coffee powder
- 3/4 cup buttermilk
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon peppermint extract
- FROSTING:
- 2 cups confectioners' sugar
- 4 oz packages cream cheese
- 1/8 teaspoon peppermint extract
- 4 - 6 red food coloring drops
- GARNISH:
- brown sprinkles
How To Make chocolate peppermint cupcakes

Step 1CUPCAKES: Preheat oven to 350 degrees F. In a standing mixer with paddle, add brown sugar & butter, beat on medium speed for 2 minutes. Add eggs, 1 at a time, until combined. In another bowl, add flour, cocoa, dry pudding, powder, soda, salt & coffee; mix to combine. Add flour mixture to sugar mixture alternating with buttermilk & ending with flour mixture. Stir in extracts. Spoon batter into muffin cups lined with paper liners & bake 12 - 15 minutes or until cupcakes spring back when touched lightly in center. Cool in pans for 10 minutes, then remove to wire racks to cool completely.

Step 2FROSTING: In a standing mixer with whisk, add all frosting ingredients & beat on low, about 2 minutes or until combined. In a pastry bag fitted with large star, pipe frosting onto cupcakes & sprinkle with brown sprinkles.
