Bonnie's Story

Trying to get those pounds off, but your sweet tooth keeps gnawing at you? Try this low fat and low sugar chocolate bundt cake. Delicious and satisfying! Enjoy!

Ingredients

1
sugar free pillsbury moist supreme devil's food cake mix with splenda
1
1.3 ounce box of jello brand sugar free fat free chocolate pudding
1
cup nonfat sour cream
1/2
cup applesauce (or 1/2 cup oil)
1/2
cup water
4
eggs
1
cup (8 ounces) of jumbo chocolate chips

Directions Step-By-Step

1
PREHEAT THE OVEN:
Preheat the oven to 350 degrees. Grease and flour a bundt pan.
2
MAKE THE CAKE:
Combine all the ingredients except the chocolate chips in the mixing bowl. Use an electric mixer or a stand model mixer. Beat on medium speed for 10 minutes, then add the chips and beat one minute more. Pour into the bundt pan.
3
BAKE THE CAKE:
Bake in the 350 oven for 60 minutes. If you used oil instead of applesauce, bake ten minutes more. Cool completely in the pan before removing.
4
TO SERVE:
You may dust with powdered sugar or drizzle with your favorite glaze. Or serve it plain. Enjoy!
5
VANILLA GLAZE:
1/3 cup butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
2 to 4 tablespoons hot water.
Melt the butter in a sauce pan, add the powdered sugar and the vanilla. Add the water a little at a time until it is smooth and thick and will pour. There is enough glaze for a 12 inch bundt cake like my picture.

I made this today for a fundraiser at church tomorrow. Those of us that baked cakes were asked not to ice or glaze our cakes since we slice and wrap them. So I sprinkled mine with powdered sugar on the top. I kept one thin slice for me to taste. It's so good!!! Yummy!:)

I didn't make the cake back in September, but I do want to make it soon. I still have the cake mix and pudding, but had to buy more chocolate chips. My son tried making chocolate chip cookies. They tasted very baking soda-y. At least he tried. I will post a review once I make the cake.
