    oreo cookies
  • 2
    (8 oz. each) cream cheese, softened
  • 1 c
    sugar
  • 1 c
    sour cream
  • 2
    eggs
  • 2 Tbsp
    flour
  • 1 Tbsp
    vanilla
  • 1 can
    blueberry pie filling
  • FOR THE CHOCOLATE TOPPING
  • 1/2 c
    whipping cream
  • 1 c
    chocolate chips

How To Make chocolate covered blueberry pie cheesecakes

    Preheat the oven to 350*. Split the oreos in half and place in the bottom of 20 cupcake liners. Set aside. Beat cream cheese and sugar until creamy. Add sour cream, vanilla, eggs, and flour and beat again.

    Top the cookie with 1 large tablespoon of cheesecake batter. Add a teaspoon of pie filling. End with another tablespoon of cheesecake batter. Bake for 30 minutes. Let cool on a wire rack. When completely cool, top with chocolate topping.

    In a small saucepan over medium heat, bring whipping cream to a boil. Remove from heat and stir in chocolate chips. Let set for a minute. Stir until creamy. Let cool for a few minutes. Top each cheesecake with a spoonful and spread out. Garnish with cool whip and sprinkles.
