So moist that you don't have to frost it. I also won at the county fair with this cake.
You can also replace carrots with apple pie filling.

Ingredients

2 c
sifted, flour
2 tsp
baking powder
1 1/2 tsp
salt
1 tsp
cinnamon
1/2 tsp
nutmeg
2 1/2 c
sugar
1 c
butter, softened
4
egg yolks
1 c
cooled, cooked mashed carrots
5 tsp
cocoa powder
1/2 c
milk
1/2 c
raisins
1/2 c
chopped,walnuts
4
egg whites

Step-By-Step

1Combine in bowl sugar, butter, beat until well blended. Add 4 egg yolks, beat till light.
2Beat in mashed carrots, cocoa, add flour, baking powder, salt, cinnamon and nutmeg. Alternately with milk. Blending well after each addition.
3Stir in raisins, nuts. Beat the egg whites until stiff, glossy peaks form. Fold into chocolate mixture a d blend. Pour into greased 10-inch tube or bundt pan.
4Bake at 350 degrees for 65 to 70 minutes. Let cool right side up before removing from pan.
