Ingredients

3 c peeled apples, sliced thin
2 c white sugar
1 c crisco oil
1/2 tsp baking soda
3 tsp baking powder
3 c all-purpose flour
1 tsp vanilla
2 eggs
1 c walnut pieces, optional
1/2 c raisins, optional
sprinkle confectioner's sugar
CREAM CHEESE TOPPING
3 oz cream cheese, room temperature
3 Tbsp margarine or butter
1/2 tsp vanilla
1 1/2 c confectioner's sugar

Fran's Notes:

Mom got this recipe from my Aunt Waneta Lynch Harris around 1963. My brother, Bob, always wanted this cake as his birthday cake.

Mom always served it without frosting, but my niece, Emilea, who is a pastry chef, recently added a cream cheese frosting. So I'm including a Cream Cheese Topping that can be added, if you wish. =^..^=

 

Directions

Stir the apple slices and sugar together in a large bowl & let stand for one hour.

Add oil, baking soda, baking powder, flour, vanilla, eggs, walnuts, & raisins to the apples & sugar and mix together well. You may need to add a little milk (start with 1 Tablespoon) to make the batter stirrable, depending on the juiciness of the apples.

Pour the batter into a cooking-sprayed 13 x 9 pan.

Bake at 350 degrees F. for 40-45 minutes, until a toothpick comes out clean from the center.

Sprinkle with a little confectioner's sugar, if desired. Serve warm or cooled. Top with Cream Cheese Topping or whipped cream.

CREAM CHEESE TOPPING: Beat all ingredients together using a mixer until well-blended. Chill until ready to use.

Hi Fran, I would like to make this recipe and when I first saw the picture I thought it had a crumb topping ...I was wondering if you have ever used a crumb topping on it? I know this recipe is very good (and I am a big fan of cream cheese frosting)as is but for some reason I am craving like an apple crumb coffee cake.

Hey, Chris! Full disclosure: I've never used the cream cheese frosting with this cake, although I've been assured it is delicious. Plus, I only put the powdered sugar on it for the photo. But I'm intrigued with the idea of adding a crumb topping. Did you mean just a simple one, like you use for a pie, with something like 1 cup of brown sugar, 1 cup of flour, and 1/2 a stick of softened butter? Maybe some cinnamon? (There's no cinnamon in the cake.) If you make it, let me know what you think. Thanks for posting! =^..^=

You know, Paulette, I didn't hear back about the crumb topping nor did I try it myself. (I grew up eating this cake "plain" and still prefer it that way.) But if you try it, please let me know what you think. This is the same crumb topping I use for Apple Crisp. Have a great weekend! =^..^=

Linda, picking apples with kids & grandkids is a tradition in my family, too. Have to teach those young'uns how to make our Apple Pies, Apple Cakes, and Homemade Applesauce so they can feed us properly when we get too old to cook! LOL =^..^=
