Chipped Apple Cake with Cream Cheese Topping
|3 c||peeled apples, sliced thin|
|2 c||white sugar|
|1 c||crisco oil|
|1/2 tsp||baking soda|
|3 tsp||baking powder|
|3 c||all-purpose flour|
|1 c||walnut pieces, optional|
|1/2 c||raisins, optional|
|CREAM CHEESE TOPPING|
|3 oz||cream cheese, room temperature|
|3 Tbsp||margarine or butter|
|1 1/2 c||confectioner's sugar|

DirectionsStir the apple slices and sugar together in a large bowl & let stand for one hour.Add oil, baking soda, baking powder, flour, vanilla, eggs, walnuts, & raisins to the apples & sugar and mix together well. You may need to add a little milk (start with 1 Tablespoon) to make the batter stirrable, depending on the juiciness of the apples.Pour the batter into a cooking-sprayed 13 x 9 pan.Bake at 350 degrees F. for 40-45 minutes, until a toothpick comes out clean from the center.Sprinkle with a little confectioner's sugar, if desired. Serve warm or cooled. Top with Cream Cheese Topping or whipped cream.CREAM CHEESE TOPPING: Beat all ingredients together using a mixer until well-blended. Chill until ready to use.
