Add the butter to the cookie crumbs.
Divide the crumb mixture between three or four small jars, and press into the bottoms.
Chef's Note: If you're looking for an excellent homemade chocolate cookie crumb base... Here ya go:
Add the cream cheese, sugar, and honey to a bowl.
Beat until thoroughly combined.
Add the egg and sour cream.
Continue to beat until the mixture is combined.
Divide the cheesecake batter between the jars.
Add the jars to a small, high-walled pan.
Place in the oven, and fill the pan halfway up with boiling water.
Chef's Note: By cooking the jars in a water bath, you're giving them a nice steady heat to cook in.
Bake until the cream cheese sets, about 20 to 25 minutes.
Chef’s Note: There will still be a bit of a jiggle in the centers.
Cover the jars, and cool in the refrigerator for 1 or 2 hours.
Add your favorite topping, and serve. Enjoy.
Chef’s Note: If not serving right away, place the tops on the jars, and keep refrigerated.
Chef’s Tip: These make brilliant gifts around the holidays.
Keep the faith, and keep cooking.
