I have made these many times and they are so delicious. they are "cupcake" size and good to take to potlucks and family gatherings. no need to worry about utensils and etc...
2 1/2 c
pastry flour, or all purpose
8 oz pkg
pure vanilla extract

prepared fruit filling, can be canned or homemade, such as pie filling, or preserves

1mix crust ingredients as you would pie dough.
2spray muffin tins with cooking spray. make crusts on bottom and up inside edges, about an inch to form a cup.
3mix "top with" ingredients, except for fruit filling.
4put 2 TBS. on crust, place 1 tsp. or more fruit filling, or preserves, and cover with another tablespoon of cheesecake mixture.
5bake 350 degrees for 20 to 30 minutes.
