I used to go to a little amish bakery in "Charm" Ohio and buy these. The Little lady who owned the franchise "Mary", gave me her recipe. I have made these many times and they are so delicious. they are "cupcake" size and good to take to potlucks and family gatherings. no need to worry about utensils and etc...
mix crust ingredients as you would pie dough.
spray muffin tins with cooking spray. make crusts on bottom and up inside edges, about an inch to form a cup.
mix "top with" ingredients, except for fruit filling.
put 2 TBS. on crust, place 1 tsp. or more fruit filling, or preserves, and cover with another tablespoon of cheesecake mixture.
bake 350 degrees for 20 to 30 minutes.
