This is an exremely moist carrot cake that doesn't require any frosting to make it delicious.

Ingredients

3 large
eggs
2 c
sugar
1 1/2 c
vegetable oil
3 c
all purpose flour
2 tsp
soda
1 tsp
salt
2 tsp
ground cinnamon
1 1/2 c
grated carrots
1 c
chopped nuts
1 can(s)
20 oz can of crushed pineapple well drained
2 tsp
vanilla extract

Step-By-Step

1Combine eggs, sugar and oil in a large mixing bowl; beat well.

2Gradually beat in flour, soda, salt and cinnamon.

3Stir in carrots, nuts, pineapple and vanilla.

4Pour into greased and floured 10 inch tube pan.

5Bake at 350 degrees for 1 hr and 15 minutes.
