Carrot Cake with Cream Cheese Icing

An easy, moist carrot cake.

Ingredients

2 c
flour
2 tsp
baking soda
1 1/2 tsp
baking powder
1 tsp
salt
2 tsp
cinnamon
1 c
sugar
1 c
oil
4
beaten eggs
2 c
grated carrot
1 1/4 c
drained pineapple

ICING

8 oz
cream cheese
1/2 c
butter
2 c
icing sugar
1 tsp
vanilla

Directions Step-By-Step

Mix flour, baking soda, baking powder, salt and cinnamon.

Add sugar, oil and eggs. Mix.

Add carrot and pineapple. Mix well.

Pour into a buttered and floured pan and bake for 55 minutes at 350 degrees.

Cool on wire wrack.

Icing Sugar:

Place cream cheese, butter, icing sugar and vanilla in a bowl and cream until smooth.

Spread over cooled cake.
