Carrot Cake with Cream Cheese Frosting

My son-in-law requests this for his birthday every year and all of his co-workers tell him it's the best carrot cake they've ever had.

Ingredients

4
eggs
2 c
all purpose flour
2 c
sugar
2 tsp
baking powder
1 tsp
cinnamon
1 1/2 tsp
baking soda
1 3/4 c
vegitable oil
3 c
packed, shredded carrots

CREAM CHEESE FROSTING

8 oz
room temperature cream cheese (do not use the softened)
1/2 c
room temperature butter
6 c
powdered sugar
1 1/4 tsp
pure vanilla extract

Step-By-Step

1Combine the dry ingredients and in another bowl, stir together the eggs, carrots and the oil. Add the carrot mixture to the dry ingredients and still until combined. Pour into 2 prepared 8 inch round cake pans and place in a preheated 350 degree oven.

2Bake for 30-35 minutes and cool in pans for 10 minutes then remove to rack and cook completely while making frosting

3For the frosting, mix together the cheese and butter and slowly mix in the powdered sugar and vanilla. This will adequately frost the cake attractively.
