Ingredients
| 2 c | sugar |
| 1 c | vegetable oil |
| 3 | eggs |
| 1 tsp | soda |
| 2 tsp | cinnamon |
| 1 3/4 c | crushed pineapple and a little juice |
| 2 c | sifted flour |
| 1/2 tsp | salt |
| 2 tsp | vanilla |
| 2 c | grated carrots, not organic or baby carrots |

Directions
Mix together eggs, sugar and oil. Add flour, soda, salt, cinnamon and vanilla. Blend in pineapple and carrots. Bake in 13 x 9 pan @ 350 for 40-45 minutes.
Frosting: Blend together 8 oz. cream cheese, 4 c. powdered sugar, 1/2 c. margarine and 2 tsp. vanilla
Blend all together and frost cake after cool. Be sure to use regular cream cheese and margarine because if you use the lite versions, frosting will not set up.
