This is not only a family favorite, but friends at work ask me to make it for every potluck. I think that's all they think I can make but it is scrumptious.

Ingredients

2 c
sugar
1 c
vegetable oil
3
eggs
1 tsp
soda
2 tsp
cinnamon
1 3/4 c
crushed pineapple and a little juice
2 c
sifted flour
1/2 tsp
salt
2 tsp
vanilla
2 c
grated carrots, not organic or baby carrots

Directions

Mix together eggs, sugar and oil. Add flour, soda, salt, cinnamon and vanilla. Blend in pineapple and carrots. Bake in 13 x 9 pan @ 350 for 40-45 minutes.
Frosting: Blend together 8 oz. cream cheese, 4 c. powdered sugar, 1/2 c. margarine and 2 tsp. vanilla
Blend all together and frost cake after cool. Be sure to use regular cream cheese and margarine because if you use the lite versions, frosting will not set up.
