Carrot Cake Hawaiian Delight

|1 3/4 c||crushed pineapple and a little juice|
|2 c||sifted flour|
|2 c||grated carrots, not organic or baby carrots|

DirectionsMix together eggs, sugar and oil. Add flour, soda, salt, cinnamon and vanilla. Blend in pineapple and carrots. Bake in 13 x 9 pan @ 350 for 40-45 minutes.
Frosting: Blend together 8 oz. cream cheese, 4 c. powdered sugar, 1/2 c. margarine and 2 tsp. vanilla
Blend all together and frost cake after cool. Be sure to use regular cream cheese and margarine because if you use the lite versions, frosting will not set up.
