very moist and very yummy. i used to make this for my ex-husband who is a truck driver and it was such a big hit i used to have to make it for half the trucking fleat.

Ingredients

flour
1 1/2 tsp
baking soda
1/2 tsp
salt
1 c
oil
2 c
grated carrots, raw
1/2 c
walnuts,crushed (optional)
1 can(s)
(8 oz) crushed pineapple, drained
2 tsp
baking powder
2 tsp
cinnamon
2 c
sugar
1/2 c
pineapple juice
4
eggs
8 oz
cream cheese
1/2 c
butter
2 tsp
vanilla
1 lb
confectioners sugar

Step-By-Step

1preheat oven 350 degrees. grease and flour a 13x9" pan or a tube pan, or two square pans

2in a large bowl, combine flour,baking powder,baking soda,salt,cinnamon,and sugar.

3put a hole in the center of the dry ingredients and add:oil,pineapple juice,and unbeaten eggs. add crushed pineapple, carrots and walnuts and mix well bake 35 to 45 minutes

4cream cheese frosting: mix together cream cheese,softened butter,vanilla and confectioners sugar until smooth. then ice cake when completely cooled. ( you may wish to reduce above amount slightly for a thinner icing)
