This is a favorite carrot cake recipe in our family and extended family. Very moist and good to the very last bite.

Ingredients

2 c
granulated sugar
3 large
eggs
3/4 c
vegetable oil
3/4 c
buttermilk
2 tsp
vanilla
2 tsp
cinnamon
2 c
all purpose flour
2 tsp
baking soda
1/2 tsp
salt
2 c
shredded carrots
1 can(s)
8 oz crushed pineapple
1 c
flaked coconut
1 c
chopped nuts

Step-By-Step

1In a large bowl mix together sugar, eggs and oil until thoroughly combined. Add buttermilk, vanilla, and cinnamon. Mix until combined.
2Sift together flour, baking soda, and salt, in a medium bowl; than add to wet ingredients. Mix just until combined. Stir in shredded carrots, crushed pineapple, flaked coconut and chopped nuts; Just until incorporated.
3Lightly grease 9 by 13 pan. Pour in batter and place in preheated 350 degree oven. Bake 55 min or until toothpick comes out clean.
