In a large bowl mix together sugar, eggs and oil until thoroughly combined. Add buttermilk, vanilla, and cinnamon. Mix until combined.
Sift together flour, baking soda, and salt, in a medium bowl; than add to wet ingredients. Mix just until combined. Stir in shredded carrots, crushed pineapple, flaked coconut and chopped nuts; Just until incorporated.
Lightly grease 9 by 13 pan. Pour in batter and place in preheated 350 degree oven. Bake 55 min or until toothpick comes out clean.
