I got this many many years ago & it is really great and moist. I have to take it to our family reunion each year, or will probably be banned. LOL

2 c
flour
2 c
sugar
1 1/2 c
salad oil
3 c
carrots, grated
1 c
pecans, chopped
2 tsp
cinnamon
2 tsp
soda
2 tsp
baking powder
1 tsp
salt

Directions Step-By-Step

mix together:

2 cups flour
2 cups sugar
1 1/2 cups salad oil
add 4 eggs, one at a time and mix

mix in well:

3 cups grated carrots
1 cup chopped pecans
2 tsp cinnamon
2 tsp soda
2 tsp baking powder
1 tsp salt

mix well, bake at 375 degrees for 40 minutes. everyone's oven is different, so time will vary. check with toothpick. leave out 1 to 2 hours to cool before icing.

Icing:
8oz package cream cheese, softened.
2 tsp vanilla
3 1/2 cups powdered sugar

cream together and spread on cooled cake
