Butterscotch Tiramisu Parfaits
2 - 3.4 oz
butterscotch instant pudding
heavy whipping cream, divided
1 - 8
mascarpone cheese, room temperature
3 - 3 oz.
kahlua or stong brewed coffee
Prepare pudding mix according to package directins using 3 1/2 C of milk for both packages.
In a large bowl, beat 2 C whipping cream at medium-high speed with a mixer until soft peaks form. Gradually beat in 2 Tbsp sugar.
In seperate bowl, beat mascarpone cheese, remaining 1/2 C sugar & remaining 1/2 C whipping cream. Gently fold pudding/mascarpone mixture into whipped cream mixture.
Brust cut sides of ladyfingers with kahlua. Layer ladyfinger & pudding mixture in parfait glasses or wine glasses.
Cover & refrigerate at least 4 hours.
IN A HURRY?
Layer the drenched ladyfingers & pudding mixture alternately in a large serving bowl, ending with the pudding mixture. Dust the top with sifted cocoa just before serving.
