- butterscotch instant pudding

- 2 1/2 c
- heavy whipping cream, divided
- 1 - 8 oz
- mascarpone cheese, room temperature
- 3 - 3 oz. pkg
- ladyfingers, split
- kahlua or stong brewed coffee
2In a large bowl, beat 2 C whipping cream at medium-high speed with a mixer until soft peaks form. Gradually beat in 2 Tbsp sugar.
3In seperate bowl, beat mascarpone cheese, remaining 1/2 C sugar & remaining 1/2 C whipping cream. Gently fold pudding/mascarpone mixture into whipped cream mixture.
4Brust cut sides of ladyfingers with kahlua. Layer ladyfinger & pudding mixture in parfait glasses or wine glasses.
