I love this butter pecan cake. It is a very attractive cake. This is usually my birthday treat to myself.

Ingredients
- 2 2/3 cups chopped pecans
- 2 cups sugar
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1 1/4 cups softened butter
- 4 - eggs
- 2 teaspoons baking powder
- 1 cup milk
- FROSTING
- 1 cup butter
- 8 - 8 1/2 cups confectioners' sugar
- 1 can evaporated milk (5 oz)
- 2 teaspoons vanilla extract
- - remaining pecans
How To Make butter pecan cake

Step 1Place pecans and 1/4 cup butter in a baking pan. Bake at 350 for 15-18 minutes stirring often.

Step 2Cream sugar and remaining butter. Add eggs, one at a time, beating well after each addition.

Step 3Combine flour, baking powder, and salt. Add to cream mixture, alternating with milk. Stir in vanilla and 1 1/3 cups of toasted pecans.

Step 4Pour batter into 3 greased and floured 9' cake pans. Bake at 350 for 18-22 mins. Remove from pans.

Step 5FROSTING: Cream butter and sugar. Add milk and vanilla. Beat until smooth. Stir in remaining pecans.

Step 6Spread frosting between layers as well as on top and sides.
